These were very yummy. I made them twice. Not planning on it, but ended up doing them twice.
2 cups all purpose flour
1/3 cup brown sugar
1/2 tsp each cinnamon, ginger
1 tsp baking powder
2 pinches each of salt, baking soda
1 stick unsalted butter, pieced
1/3 cup white chocolate chips
1/3 cup pecans
1/3 cup buttermilk
1/2 cup canned pumpkin
1 tsp vanilla
sugar (for sprinkling on top).
Heat oven to 350. Lightly spray scone pan with baking spray. Mix together dry ingredients, cut in butter till gravely mix. Create well in center, and mix in wet ingredients. Fold in chips and nuts. Spoon into pan, sprinkle with sugar, bake for about 20 minutes.
I put in more pumpkin and buttermilk and they turned out more like muffins - so depending on how you like your scones - add wet ingredients accordingly. Definitely a keeper!
